This is a good summer grill recipe, best made with high quality albacore tuna steaks.

Marinade
Whisk Together:
1/3 cup rice vinegar
3 Tbsp. sugar
3 Tbsp. dry sherry
2 Tbsp. soy sauce
1 Tbsp. chili garlic sauce
1 Tbsp. toasted sesame oil

Stir In:
1/4 cup scallions, chopped
4 garlic cloves, crushed
4 thin slices fresh ginger, crushed

Pour into a large plastic bag and add tuna steaks. Marinate in refrigerator for 30 minutes. Clean grill grates then brush with oil or spray with non-stick spray. Preheat grill to medium-high. Grill steaks to desired degree of doneness – just seared is best! Top each steak with a slice of Wasabi Butter (below). Serve with Sesame Rice Cakes.

Wasabi Butter
Stir Together:
2 Tbsp. wasabi powder
1 Tbsp fresh orange juice
1/2 cup unsalted butter, softened
1 Tbsp. minced fresh cilantro
1 tsp. kosher salt

Spread onto plastic wrap, roll into a cylinder, twist ends of wrap together, and chill until firm. Slice to place on steaks.
