I’m not a huge fan of salads as a substitute for a real dinner, but this one really does make a great dinner!
Salad Ingredients
New Potatoes, cooked and sliced (keep skin on)
Steamed fresh green beans
Sliced Bermuda onion
Sliced cucumber
Tomato wedges
Hard boiled eggs, quartered
chunk tuna (Italian in olive oil, drained – save oil for dressing!)
sliced black olives
fresh parsley
anchoviesDressing
2 1/2 Tbsp red wine vinegar
1 Tbsp dried parsley flakes
1/8 cup sugar
3/4 tsp garlic powder
1 tsp dried basil
1/4 tsp salt
1/4 tsp white pepper
2 1/2 Tbsp Dijon mustard
3/4 cup olive oilCombine dressing ingredients and beat well until thoroughly combined.
Arrange salad ingredients on plates atop lettuce leaves. Garnish with olives, parsley and anchovies. Drizzle dressing over salad.
