This masa recipe can be used for meat or bean tamales. If making bean tamales you may want to use vegetable stock instead of chicken so that you have a true vegetarian dish.
Ingredients
2 cups masa harina (corn flour)
2 cups chicken stock (or stock from cooking meats for tamales)
1 cup lard (shortening will work)
1 tsp salt
1 tsp baking powderDirections
- Put masa harina in the bowl of an electric mixer. Add stock while mixing at low speed. Gradually increase speed to medium high and beat for 5 minutes.
- Gradually add lard and salt, and continue beating until dough is soft and light.
- Dissolve baking powder in a little water and add to dough. Mix until dough is light and fluffy, about 5 minutes.
