This masa recipe can be used for meat or bean tamales. If making bean tamales you may want to use vegetable stock instead of chicken so that you have a true vegetarian dish.

Ingredients
2 cups masa harina (corn flour)
2 cups chicken stock (or stock from cooking meats for tamales)
1 cup lard (shortening will work)
1 tsp salt
1 tsp baking powder

Directions

  1. Put masa harina in the bowl of an electric mixer. Add stock while mixing at low speed. Gradually increase speed to medium high and beat for 5 minutes.
  2. Gradually add lard and salt, and continue beating until dough is soft and light.
  3. Dissolve baking powder in a little water and add to dough. Mix until dough is light and fluffy, about 5 minutes.
