This morning Austin and I were getting ready for our race when we noticed a killdeer just outside of the race transition area doing the “broken wing” routine & trying to get us to chase her. We then saw that there was an area just outside of the fence that had cones all around it, and right in the middle of it was a nest with 4 eggs – momma was trying to lure us away from her nest! By the end of the day she had become somewhat accustomed to all of the people passing through. She still wasn’t happy with the situation, and still showed some dedication to her “luring the predators away” duties, but she did let us get a nice picture of her standing over the nest.

Austin and I are in Hancock, Maryland on our way to compete in an adventure race tomorrow, and while we were taking a walk before dinner he found this cute baby turtle. It was in the weeds near the shore in a section of the old C&D Canal. After taking a couple of pictures we returned him to the canal. Ariana would have liked to see it, but this picture will have to do 🙁

Austin has been having fun with this squirrel out on our back deck. When we first moved in he wouldn’t come close to the house, but now he is willing to hold onto the peanut until he is face to face with Austin (and the cat) through the sliding door. Austin hopes to have him eating out of his hand by the end of the summer.

Austin went on a fly fishing trip yesterday with a friend and caught this good looking steelhead trout. This one will be dinner when my parents come to visit tomorrow, but the really big one got away… 🙂

This recipe is based on the recipe by Mandi Forrester that won Rachel Ray’s March Menu Mania recipe contest. It is a very easy chili recipe that can be altered significantly with the use of different kinds of salsa – try with a jar of green tomatillo salsa, or if you have a little time with homemade tomatillo salsa. The recipe would be great with a rotisserie chicken, but I made it with boneless chicken breasts that I cooked in the broth. I had a couple of leftover flour tortillas left in the fridge and I chopped them up and added them to the chili as well. Maybe some fresh chopped cilantro as well…

Ingredients

  • 1 box (32 oz) chicken broth
  • 2 cans (14.5 oz each) white beans
  • 5 cups chopped cooked chicken
  • 16 oz salsa
  • 8 oz pepper jack cheese, grated
  • 2 tsp ground cumin
  • 2 tsp chopped fresh Oregano (if available)
  • 4 cloves garlic, minced
  • white pepper to taste
  • 1/2 cup or more finely crushed corn chips

Directions
Place all ingredients in a crockpot or pan on the stove and cook until cheese is all melted and well mixed into the chili. Simmer to thicken if desired (or add more corn chips…) Garnish with more corn chips and sour cream & serve.
